I find a 'solution', if I disable internet connection, the game runs perfectly fine again. In my case I selected from 1 to 8, excluding core 0 and threads. Limit the amount of cores the game uses. This worked for me, using a Ryzen 7 3700x, The game is set to use all cores and threads. The problem might comeback in the future, Just repeat these steps.
It solved this issue in DS3, 1 and Sekiro. Windows > Clic on gear icon (settings) > Network and Internet > 'Status' So its maybe something related to their engine? Something that, again, never happened before. This is also happening to me in Dark Souls 1 Prepare to die and Sekiro. The game runs fine until it freezes for 1 sec, then 2 or 3 secs after that, it freezes again and back to normal, that happens every few minutes. But doing the steps mentioned again (it takes 5 clics), will solve it.
